Inulin appears as a whitish powder, soluble and is commonly found in a multitude of vegetables. This inulin is medium chain. As with all fibers and sugars, inulin, always used only in the recommended dosage (1% of the flour used), is a valid aid in the preparation of cakes, muffins, shortcrust pastry and homemade creams; in fact, it helps to preserve moisture in cakes and biscuits and is an effective binding agent for creams.
In the preparation of ice cream and sorbets it is an excellent support of solids without added lactose and gives greater creaminess to the ice cream.

Inulin powder is a soluble and prebiotic fiber, like many fibers indigestible by the human body, composed of long chains of fructose. It is contained in various tubers and vegetables such as Jerusalem artichoke, agave, chicory and white truffle. The most neutral comes from chicory.
Often also used for the production of supplements, it appears as a whitish powder, with a neutral flavour and an impalpable consistency.
In the preparation of ice cream and sorbets it is an excellent support of solids without added lactose and gives greater creaminess to the ice cream. It can behave like both sugars and fats depending on the dosage used.
It can replace part of the sugars by ballast the mixture and increasing its volume, helping to lower the freezing point of water, but also enhancing the anti-freezing capacity of some sugars used in ice cream, such as dextrose.
The sweetening power is very low, approximately 15% compared to that of sucrose. It is particularly used in fruit-based ice creams and sorbets (in percentage 1-2% of the weight of the mix), as they usually lack total solids.
Inulin in ice cream can be said to facilitate the absorption of air during the churning of the mixture, promoting overrun, inhibits the formation of ice crystals in the finished product and improves the consistency of the ice cream, stabilizing the emulsions and enhancing the aroma. It therefore guarantees a soft, creamy and homogeneous ice cream, more stable against thermal shock.
Due to its neutral flavour, it is also widely used in the dough for savoury baked goods. It makes unleavened baked doughs such as biscuits, shortcrust pastries, brisée, wraps, tortillas and waffles more workable, while it loses its effectiveness in the presence of yeast.
CONSERVATION: if stored in a cool, dry place it maintains its stability until the expiry date. After each use, close the package and keep in a clean and cool environment. Handle only with perfectly clean and dry tools. Before each use, check the state of conservation of the product.
